A few things to consider when organizing a Greek Festival

A list of things that seem to work well (besides the standard food and band attractions) are:

• Organizing a rafle if you get local industry to provide substantial attraction (like airplane tickets to Greece)
• Organizing a running competition (sort of mini-Olympics)
• Organizing demos of folk dancing, or teaching basic Greek folk dancing
• Organizing cooking demonstrations
• Organizing tours of the Church if it is a big one
• Organizing cultural exhibitions that are set up in a separate area with narrators (you can exhibit traditional clothing, handmade textiles, slides, photographs, potery, and other items of folk art).
• Making sure the local news gets on the site and announcing your event early enough is important.

Also note:

• You may need clearances from local city authorities in order to comply with local ordinances
• You need to arrange for police presence (people will get drunk)
• You need to make sure your establishment complies with city fire codes (easy emergency and fire escape access, etc).
• if possible it would not be a bad idea to arrange for a medical emergency readiness
• make sure you have plenty of serving and cleaning personel (because at the end of each day there will be too much mess to clean up).
• You need reliable accounting. You need to arrange who will be taking money and for what and how to account for it. Also, you need to clarify what bank accounts this money will be going to and if there are tax liabilities. For such matters you need to consult appropriate authorities and accountants.
• You need to distribute the cooking duties to groups led by reliable people
• You need unassigned people who would react rapidly to reinforce whatever group gets overloaded

• Use past projections to figure out how much you can extend financially without undue risk.
• Have a menu board with pictures of the food for each item (and description). This will decrease issues about people getting what they want and it will speed up service at the ticket line as ticket sellers don't have to explain what is in each meal.
• Creating drive through/take out area can really grow your sales as people don't always want to deal with the crowds.
